Instant Pot Pumpkin Pie Oatmeal


Description

A cozy and creamy oatmeal recipe that tastes like pumpkin pie, made easily in the Instant Pot.


Ingredients

  • 1 cup steel cut oats
  • 1 cup pumpkin puree
  • 2 cups milk or non-dairy milk
  • 1 cup water
  • 2 tsp pumpkin pie spice
  • 2 tbsp maple syrup or brown sugar
  • Pinch of salt
  • 1 tsp vanilla extract (optional)

Instructions

  1. Spray the Instant Pot insert with oil or butter to prevent sticking.
  2. Add steel cut oats, water, milk, pumpkin puree, salt, and spices. Stir well.
  3. Lock the lid and set to pressure cook on high for 4 minutes.
  4. Let it naturally release pressure for 10 to 15 minutes, then carefully release the remaining pressure.
  5. Stir in the sweetener and vanilla. Adjust spices to taste.

Notes

Let the oats cool for a few minutes to thicken before serving. Add a splash of liquid when reheating if needed.
