A creamy, bright, and refreshing virgin piña colada that feels like a mini vacation in a glass.
Ingredients

- 2 packed cups frozen pineapple chunks
- 3/4 cup full-fat coconut milk or coconut cream
- 1/2 to 3/4 cup pineapple juice, to taste
- 1 tablespoon fresh lime juice
- 1 to 2 teaspoons honey or maple syrup, optional
- 1 to 1.5 cups ice, depending on desired thickness
- Pinch of salt
Instructions
- Add frozen pineapple, coconut milk, 1/2 cup pineapple juice, lime juice, salt, and 1 cup of ice to a blender.
- Blend on high until smooth and creamy. If it’s too thick, add a splash more pineapple juice. If it’s too thin, add a few ice cubes.
- Taste and if desired, add honey or maple syrup and blend again for a few seconds.
- Pour into chilled glasses and garnish with pineapple wedges, lime wheels, or toasted coconut.
Notes
For a thicker texture, use frozen pineapple. Chill your glasses for a frosty sip. Adjust sweetness with honey or maple syrup as needed.
