A bright and refreshing juice made with tart Granny Smith apples, ginger, and lemon, perfect for a quick energy boost.
Ingredients

- 2 medium Granny Smith apples, cored
- 1 to 2 inches fresh ginger, peeled
- 1 medium cucumber
- 1 big handful spinach or kale
- Juice of half to one lemon
- Cold water (optional, to thin if needed)
- Ice (optional, for serving)
- Mint leaves (optional, for freshness)
- Pinch of sea salt (optional, for flavor)
- Splash of raw apple cider vinegar (optional, for tang)
Instructions
- Wash all ingredients thoroughly.
- Core the apples and peel the ginger.
- If using a juicer, feed cucumber, greens, apples, and ginger through the juicer, finishing with lemon juice.
- If using a blender, chop cucumber, apples, ginger, and lemon juice, blend until smooth, then strain through a fine mesh sieve.
- Serve over ice and garnish with a thin apple slice if desired.
Notes
For a sweeter drink, mix in half a sweeter apple like Honeycrisp. Fresh is best – consume immediately or store in an airtight jar for up to 24 hours.
