Purple Beet Berry Juice


Description

A vibrant and energizing juice that balances earthy beet flavor with refreshing berries and crisp apple.


Ingredients

  • 1 small raw beet, scrubbed and trimmed
  • 1 cup mixed berries (blueberries, blackberries, raspberries)
  • 1 crisp apple (Honeycrisp or Gala)
  • 1 small lemon, peeled and seeded
  • 1-inch fresh ginger, peeled
  • 1 small cucumber
  • Water or coconut water, as needed for blending
  • Optional: a pinch of sea salt, a few mint leaves, or 1 teaspoon chia seeds

Instructions

  1. If using a juicer, cut beet, apple, cucumber, lemon, and ginger into chunks that fit your juicer chute. Juice the beet first, then ginger, lemon, apple, cucumber, and berries last. Taste and adjust with a squeeze of lemon or a splash of water if you want it lighter. Pour over ice and enjoy immediately.
  2. If using a blender, add beet (cut into small chunks), berries, apple, lemon, ginger, and 1 cup water or coconut water to the blender. Blend on high until completely smooth. If too thick, add more water little by little. For a classic juice feel, strain through a fine mesh sieve or nut milk bag. For a smoothie-style drink, skip straining.

Notes

Best enjoyed fresh within 24 hours. Store in an airtight jar in the fridge and fill it to the top to reduce air contact.
