A creamy and sweet breakfast that feels like dessert, packed with fiber and protein for a fulfilling start to your day.

Ingredients

Scale
  • 1 cup milk of choice (dairy, almond, oat, etc.)
  • 1 cup raspberries (fresh or frozen)
  • 1 to 2 tablespoons sweetener (maple syrup, honey, or mashed ripe banana)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 to 2 tablespoons cream cheese (or more Greek yogurt)
  • 1/3 cup rolled oats
  • 1/2 cup rolled oats (for mixing in later)
  • 1 tablespoon chia seeds
  • Optional: lemon zest

Instructions

  1. Add 1 cup milk, 1 cup raspberries, 1 to 2 tablespoons sweetener, 1 teaspoon vanilla, pinch of salt, 1 to 2 tablespoons cream cheese, and 1/3 cup rolled oats to a blender.
  2. Blend until smooth and creamy. Taste and add more sweetener if needed.
  3. Pour into a jar or container and stir in the remaining 1/2 cup oats along with 1 tablespoon chia seeds.
  4. Cover and refrigerate for at least 4 hours, preferably overnight.
  5. In the morning, top with extra raspberries and crushed graham crackers if desired.

Notes

To adjust texture: Stir in a splash of milk if too thick, or add chia seeds if too thin. Store in the fridge and consume within 2-3 days for best flavor.
