Description
A light and refreshing juice that aids digestion, combining pineapple, cucumber, and mint for a taste of summer in every sip.
Ingredients

- 1 and 1/2 cups fresh pineapple chunks, chilled
- 1 medium cucumber, peeled if waxed, chopped
- 8 to 10 fresh mint leaves, plus a few for garnish
- 1/2 cup cold water or coconut water (adjust to taste)
- 1 teaspoon fresh lemon or lime juice, optional
- 1/2 teaspoon grated fresh ginger, optional but lovely
- A tiny pinch of sea salt to round the flavors
- Ice cubes for serving, optional
- Honey or maple syrup to taste, optional if your pineapple is not very sweet
Instructions
- If using a blender: Add pineapple, cucumber, mint, water or coconut water, citrus juice, ginger, and salt. Blend on high until silky smooth.
- Taste and adjust: add more mint for zip, more water for a lighter texture or honey if you prefer it sweeter.
- For a thinner juice-like texture, strain through a fine mesh strainer or nut milk bag, pressing gently to remove pulp.
- Serve cold over ice with a sprig of mint.
- If using a juicer: Run pineapple, cucumber, and mint through it.
- Stir in citrus juice, ginger juice, a tiny pinch of salt, and a splash of cold water if desired.
- Pour over ice and enjoy immediately.
Notes
Straining the mixture is optional; leaving some pulp adds fiber which is beneficial for digestion.
