A bright and refreshing juice that combines pineapple and cucumber for a hydrating, delicious drink.
Ingredients

- 2 cups ripe pineapple, peeled and chopped
- 1 large cucumber, peeled if waxed and chopped
- Juice of 1 lime (optional)
- 1 small piece fresh ginger (optional)
- 1 cup cold water or coconut water (more as needed)
- Ice, to serve
- Pinch of sea salt (optional)
Instructions
- Add pineapple, cucumber, lime, ginger, and water to a blender.
- Blend on high until smooth. Taste and adjust with more water if it’s too thick.
- For a silky juice, pour through a fine strainer or nut milk bag. If you like fiber, skip this step.
- Serve over ice with a squeeze of lime and a pinch of sea salt if desired.
Notes
Choose ripe pineapple for sweetness. Peel cucumber if waxed to remove bitterness. Store juice in the fridge for up to 24 hours.
