A bright and hydrating juice made with fresh apricots, peaches, and sweet potato, perfect for hot afternoons.
Ingredients

- 4–6 medium apricots, pitted
- 2 large ripe peaches, pitted and sliced
- 1 small to medium orange sweet potato, peeled
- 1 teaspoon fresh lemon juice (adjust to taste)
- Optional: thin slice of ginger
- 1 cup cold water (for blending)
Instructions
- Wash the apricots and peaches. Pit and slice them to fit your juicer or blender.
- Peel the sweet potato and cut it into smaller pieces.
- For juicing, feed the sweet potato first, followed by the fruits. Taste and add lemon juice.
- For blending, combine all ingredients (including water) and blend until smooth. Strain if desired.
- Adjust sweetness and consistency as needed, then serve over ice or chilled.
Notes
Best served fresh, and can be stored in the refrigerator for up to 24 hours. Adjust lemon juice and sweetness according to your taste.
