Ingredients

- 1 large hand of fresh turmeric, scrubbed and sliced thin
- 1 large thumb of fresh ginger, scrubbed and sliced thin
- 3 to 4 cups water
- Juice of 1 to 2 limes or lemons
- 1 to 2 tablespoons honey or maple syrup, to taste
- Pinch of black pepper
- Optional: a small pinch of cinnamon or a few cloves
Instructions
- Add sliced turmeric and ginger to a small pot with water. Bring to a gentle boil, then reduce to a low simmer.
- Simmer uncovered for 15 to 20 minutes until the water turns a deep golden color.
- Strain into a heat-safe jar. Stir in citrus juice, sweetener, and a pinch of black pepper.
- Taste and adjust; add more water or citrus to your preference.
- Serve warm or chilled over ice.
Notes
Store Jamu in a sealed jar in the fridge for up to 3 days. Shake before pouring.
