Ingredients

  • Ripe santol fruit, washed and dried
  • Cold water
  • Sweetener of choice (honey or simple syrup)
  • A tiny pinch of salt
  • Optional add-ins: lime or calamansi juice, mint, ginger
  • Ice cubes

Instructions

  1. Cut the santol in half and scoop out the white pulp and soft flesh, avoiding the bitter rind.
  2. Mash the pulp with a fork or blitz in a blender with a little cold water to break it apart.
  3. Add more cold water to your liking, stir, and let it sit for 5 to 10 minutes.
  4. Strain the mixture through a fine strainer or cheesecloth into a pitcher and press gently to get the juice.
  5. Stir in sweetener a bit at a time, then add a tiny pinch of salt and lime if desired.
  6. Serve chilled with ice for the best flavor.

Notes

Taste and sweeten lightly to balance the tanginess. Cold temperature smooths out the flavors.
