A creamy, caramelized pineapple smoothie that feels like dessert but delivers fresh fruit goodness.

- 1 ripe pineapple, cut into 1-inch chunks
- 1 teaspoon neutral oil or small pat of butter
- 1 cup whole milk
- 1 1/2 cups vanilla ice cream
- Optional: Drizzle of caramel sauce
- Optional: 1 teaspoon brown sugar (if pineapple is less sweet)
- Optional flavorings: vanilla extract, peanut butter, fresh ginger, Greek yogurt, baby spinach, ripe avocado
Instructions
- Cut pineapple into 1-inch chunks.
- Heat a nonstick skillet over medium-high heat and add oil or butter.
- Add pineapple in a single layer and let it sear undisturbed for 2-3 minutes.
- Flip the pineapple and cook for another 2 minutes. Add brown sugar if needed.
- Add a pinch of salt to balance the sweetness.
- Cool the caramelized pineapple briefly on the counter.
- In a blender, combine caramelized pineapple, milk, ice cream, and caramel sauce (if using). Blend until smooth and creamy.
Notes
For a dairy-free version, use full-fat coconut milk and coconut or oat-based ice cream. To make it thicker, add frozen pineapple chunks or extra ice cream.
