Ingredients

- 2 medium carrots, peeled and chopped
- 1 crisp apple, cored and chopped (Honeycrisp or Fuji recommended)
- 1 packed cup kale leaves, ribs removed
- 1 small frozen banana
- 1 teaspoon fresh ginger, grated (optional)
- 1 tablespoon lemon juice
- 3/4 to 1 cup cold water or unsweetened apple juice
- 4 to 6 ice cubes
- Optional boosters: 2 tablespoons plain Greek yogurt, 1 tablespoon chia seeds, or a scoop of vanilla protein
Instructions
- Wash and peel the carrots, then chop into coins.
- Core and chop the apple. Strip the kale leaves from the ribs.
- In a blender, add liquid first, then carrots, apple, kale, banana, ginger, lemon juice, and ice.
- Blend on low to start, then increase to high for 45 to 60 seconds until smooth.
- Taste and adjust sweetness or thickness if needed.
- To make it juice-like, strain through a fine mesh strainer if desired.
