Ingredients

  • 1/2 cup rolled oats
  • 1 cup milk of choice (dairy, oat, or almond)
  • 1/2 cup Greek yogurt
  • 1 tablespoon chia seeds (optional)
  • 1/2 cup espresso or strong brewed coffee (cooled)
  • 1 tablespoon cocoa powder
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a bowl, combine the rolled oats, milk, Greek yogurt, chia seeds (if using), espresso, cocoa powder, maple syrup, vanilla extract, and salt.
  2. Layer the oat mixture in a jar or bowl, adding extra cocoa powder and yogurt for a layered effect if desired.
  3. Cover and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
  4. In the morning, stir the mixture and adjust the thickness by adding a splash of milk if necessary.
  5. Top with additional cocoa powder or chocolate chips if desired, and enjoy!

Notes

For a dairy-free and vegan option, use plant-based yogurt and milk. Make sure to use cooled coffee to avoid gummy oats. Store in a sealed container for up to 4 days.
