- 1 to 2 teaspoons blue spirulina powder
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract
- 1 cup milk of choice
- 1 egg (or a flax egg)
- Pinch of salt
- 1 tablespoon melted coconut oil or butter (optional)
Instructions
- In a bowl, mix oat flour, baking powder, salt, and blue spirulina powder until evenly combined.
- In a second bowl, whisk milk, egg, maple syrup, and vanilla. Add melted oil or butter if using.
- Pour wet into dry ingredients and stir until just combined. Let the batter rest for 5 minutes.
- Heat a nonstick skillet on medium to medium-low and lightly grease it.
- Scoop batter onto the skillet. Cook until bubbles appear and edges look set, then flip and cook for 1 to 2 minutes more.
- Serve warm with your favorite toppings.
